Our Story

We started roasting because the coffee around us felt like it was lying to us

Manchaca doesn't have a lot of coffee roasters. The ones that existed were shipping beans that had sat in a warehouse for months, wrapped in packaging that promised more than the roast delivered.

So we bought a 5-kilo roaster, learned the craft from scratch, and set up shop on Old San Antonio Road. Every batch we pull is one we'd serve our own family. If it doesn't taste like something worth stopping for, it doesn't leave the roastery.

We rotate our offerings seasonally, but these are the pillars of the DOXA lineup — each one a honest expression of where the beans come from.
